Ingredients
½ cup butter, softened to room temperature
½ cup creamy peanut butter
½ cup sugar
½ cup brown sugar
½ tsp vanilla extract
1 egg
1½ cups flour
¾ tsp baking powder
½ tsp salt
1 (11 oz) bag mini Reese’s peanut butter cups
Instructions
Preheat the oven to 350 degrees F. Grease mini muffin pans well.
In a large bowl, cream together butter, peanut butter, sugar, and brown sugar until smooth. Beat in the vanilla extract and egg until well combined.
Gradually stir in the flour, baking powder, and salt until the mixture is well combined.
Roll the dough into balls and place them in the prepared mini muffin pans.
Bake for 8-10 minutes or until just set.
While baking, unwrap the Reese’s peanut butter cups.
Immediately after removing the cookies from the oven, press a Reese’s peanut butter cup into the center of each cookie until it is even with the top.
Let the cookies cool in the pans for a few minutes before transferring them to cooling racks to cool completely.
