These Ricotta Chocolate Chip Pastry Squares are a delightful blend of rich, creamy ricotta and sweet chocolate chips, all wrapped up in flaky puff pastry. Each square has a crispy golden exterior and a soft, melt-in-your-mouth center, making them the perfect treat for any occasion. The sprinkle of coarse sugar on top adds a delightful crunch and a touch of sweetness to balance the creamy filling.
Ingredients
1 puff pastry sheet, thawed
9 tablespoons (135g) ricotta cheese
9 tablespoons (126g) chocolate chips
1 tablespoon coarse/turbinado/demerara sugar or a pinch of sugar for each square
1 egg, whisked (for egg wash)
Instructions
Set out your frozen puff pastry sheet about 30 minutes before assembling the squares to let it thaw. Alternatively, follow the quick thaw instructions on the box if needed.
Preheat your oven to 350°F (177°C).
Unroll the puff pastry and cut it into 9 equal squares using a pizza cutter or dough cutter. No rolling pin needed! Transfer the squares to a parchment-lined baking sheet.
Place about 1 tablespoon of ricotta cheese in the center of each pastry square. Spread the ricotta into a small circle, leaving a 1-2 cm border around the edges.
Brush the exposed edges of the pastry with the egg wash, being careful not to brush the ricotta center.
Sprinkle 1 tablespoon of chocolate chips onto each square and lightly sprinkle each square with coarse sugar.
Bake the pastry squares in the preheated oven for approximately 15 minutes or until golden brown and flaky.
Remove from the oven and let them cool slightly before serving. Enjoy warm or at room temperature!
