1 1/2 cups all-purpose flour
1/4 cup sugar
2 tsp baking powder
3 egg whites
3 egg yolks
1 cup ricotta cheese
3/4 cup milk
1 tsp vanilla extract
Oil, for cooking
Instructions
Preheat a frying pan to medium heat or an electric griddle to 350°F.
In a large bowl, whisk together flour, sugar, and baking powder.
In a medium bowl, use a hand whisk or electric mixer to beat the egg whites until frothy and white in color.
In another bowl, whisk ricotta cheese, milk, vanilla, and egg yolks until smooth.
Fold the ricotta mixture into the flour mixture gently, leaving a few lumps.
Gently fold in the egg whites.
Lightly oil the preheated griddle. Pour 1/4 cup or 1/3 cup of batter for each pancake. Cook for 2-3 minutes on one side until air bubbles form, then flip and cook for another 1-2 minutes until golden.
Serve with fresh fruit, syrup, or your preferred toppings.
