  • 4 boneless, skinless chicken fillets
  • 1 sleeve Ritz crackers (Roasted Vegetable flavor recommended), crushed
  • 1/4 cup milk
  • 1 large egg
  • 2 cups shredded cheddar cheese
  • Salt, to taste
  • Garlic pepper, to taste
  • 10 oz. can cream of chicken soup (for the sauce)
  • 1/4 cup milk (for the sauce)
  • 2 tablespoons sour cream (for the sauce)
  • 2 tablespoons butter (for the sauce)

Instructions

  1. Start by preheating your oven to 400°F (200°C). Spray a baking pan with nonstick cooking spray to prevent sticking.
  2. In a shallow dish, whisk together the egg and 1/4 cup of milk. This mixture will help the cheese and crackers adhere to the chicken.
  3. Place the crushed Ritz crackers in a second shallow dish. In a third dish, place the shredded cheddar cheese. These will form the layers of your crust.
  4. Season each chicken fillet with salt and garlic pepper according to your taste preferences.
  5. Dip each chicken fillet into the egg mixture, followed by pressing the shredded cheese onto the chicken, ensuring it’s well-coated. Finally, coat with the crushed Ritz crackers. Place each coated fillet on the prepared baking pan.
  6. Bake the chicken in the preheated oven for 30 minutes, or until the chicken is fully cooked and the crust is golden and crispy.
  7. While the chicken bakes, prepare the sauce. Melt the butter in a small saucepan over medium heat, then add the cream of chicken soup, sour cream, and 1/4 cup milk. Whisk until well combined and heated through.
  8. Serve the hot chicken fillets with the creamy sauce poured generously over the top.
