Ingredients
3 cloves garlic
1 ounce Parmesan cheese (about 1/4 cup freshly grated or 1/3 cup store-bought), plus more for serving
3 sprigs fresh parsley
1 1/2 pounds boneless, skinless chicken breasts, thighs, or a combination
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 tablespoons (1/2 stick) unsalted butter, divided
Red pepper flakes, for serving (optional)
Instructions
Mince 3 garlic cloves. Finely grate 1 ounce Parmesan cheese or measure 1/3 cup store-bought grated. Finely chop parsley leaves to get 1 teaspoon.
Cut chicken into 1-inch pieces. In a large bowl, season with salt and black pepper.
In a skillet, melt 2 tablespoons butter over medium heat. Cook half of the chicken until golden-brown, about 4 minutes per side. Transfer to a plate.
Melt another tablespoon of butter in the skillet and repeat with the remaining chicken.
Reduce heat to low, add remaining butter, cooked chicken, garlic, and any juices. Cook until garlic is fragrant, about 1 minute. Remove from heat, toss with Parmesan, and garnish with parsley and red pepper flakes.
