These Roast Beef & Cheddar Sliders are a delightful combination of juicy, rare roast beef and creamy, sharp cheddar cheese encased in soft slider rolls. Perfect for gatherings, they offer a satisfying bite that is both indulgent and comforting. Each component, from the homemade cheese sauce to the flavorful Arby’s Sauce, complements the tender slices of beef, creating a slider that is bursting with flavor.

1 1/2 pounds shaved rare roast beef
2 cups beef broth or stock
3 tablespoons Worcestershire sauce
2 tablespoons butter (for cheese sauce)
2 tablespoons all-purpose flour
1 cup whole milk
1/4 teaspoon kosher salt
1/4 teaspoon white pepper
1/4 teaspoon dry mustard
A few grinds of nutmeg
1 1/2 cups shredded sharp white cheddar cheese
Arby’s Sauce (copycat or bottled)
12 slider rolls
2 tablespoons melted butter (for brushing)
12 tablespoons everything bagel seasoning


Instructions

Remove roast beef from refrigerator. Start by heating beef stock and Worcestershire sauce in a medium saucepan but do not boil yet.
For the cheese sauce, melt butter in another saucepan, add flour, and cook for three minutes. Gradually whisk in hot milk until smooth. Add salt, pepper, mustard, and nutmeg. Whisk in cheddar until creamy. Remove from heat.
Prepare Arby’s Sauce as directed.
Preheat oven to 350°F (175°C). Bring beef stock mixture to a boil.
Arrange the bottoms of slider rolls in a 9×13-inch baking dish. Spread a bit of Arby’s Sauce on each. Add roast beef to the boiling stock, then drain immediately.
Distribute beef among roll bottoms, top with cheese sauce, and cover with roll tops. Brush with melted butter and sprinkle with bagel seasoning.
Cover with parchment and foil; bake for 15 minutes. Remove cover, bake for another 10 minutes, then broil briefly to brown tops. Brush with remaining butter.
Serve with extra cheese sauce and Arby’s Sauce.
