Ingredients
6 pounds Lamb Leg (bone-in)
6 cloves Garlic (minced)
3 stems Rosemary (minced)
2 tablespoons each Salt and Freshly Ground Pepper
3 tablespoons Olive Oil
Instructions
Remove the lamb from the refrigerator and allow it to rest at room temperature for one hour.
Preheat your oven for broiling. Place the lamb on a baking tray and coat evenly with olive oil.
Generously season the lamb with salt and pepper.
Broil the lamb for 5 minutes, then remove from the oven to flip, and broil for another 5 minutes.
Once seared, remove from the oven. Mix the minced garlic and rosemary, and rub the mixture all over the lamb.
Cover the lamb loosely with foil and roast at 375 F for approximately 1 hour or until the internal temperature reaches 135 F for medium doneness.
Let the lamb rest for 15 minutes after removing from the oven before carving.
