1/2 medium green cabbage (about pounds)
1 tablespoon garlic-infused olive oil (or regular olive oil)
Salt & pepper to taste
Sauce:
3 tablespoons butter
2 tablespoons minced fresh onion
1 tablespoon Dijon mustard
1/2 teaspoon minced garlic
1/8 teaspoon each salt and pepper
Optional: chopped chives or parsley for serving


Instructions

Preheat the oven to 450 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone mat.
Cut the cabbage half into four equal wedges and place them on the prepared baking sheet. Use a pastry brush to coat the cut sides of each wedge with oil, then season with salt and pepper. Flip the wedges and repeat the oil and seasoning.
Roast in the preheated oven for 10-12 minutes, then flip the wedges and continue roasting until nicely browned, about 8-10 minutes more.
For the sauce: In a small saucepan, combine butter, onion, Dijon mustard, garlic, salt, and pepper. Cook over medium heat until the butter is melted. Keep the sauce warm until serving.
To serve, whisk the sauce again (it may separate), drizzle over the roasted cabbage wedges, and garnish with chives or parsley if desired.
