2 whole bulbs garlic
2 teaspoons olive oil
8 ounces (226 grams) unsalted butter, at room temperature
1 tablespoon chopped parsley
1 teaspoon sea salt


Instructions

Preheat the oven to 350ºF (180ºC).
Cut the garlic bulbs in half crosswise. Drizzle each half with olive oil.
Rejoin the halves and wrap them tightly in aluminum foil.
Roast in the oven for 45 minutes or until the garlic is golden brown and soft.
Allow the garlic to cool for 10 minutes, then open the foil and let it cool enough to handle.
Squeeze the soft garlic out of the skins into a small bowl.
Add room temperature butter, chopped parsley, and sea salt to the garlic.
Use a fork to mash and mix the ingredients until well combined.
For storage, place the garlic butter mixture on a piece of parchment paper and shape into a log. Twist the ends to seal and refrigerate until firm, about 2 hours. Slice to serve.
