- 2 tablespoons olive oil
- 2 chicken fillets
- 50g all-purpose flour
- 3 garlic cloves, minced
- 8 sun-dried tomatoes, sliced
- ½ tablespoon smoked paprika
- ½ tablespoon oregano
- ½ tablespoon chili flakes
- 600ml chicken stock
- 300ml single cream
- 2 tablespoons grated Parmesan, plus extra for garnish
- ½ teaspoon ground pepper
- ½ teaspoon flaky salt
- ½ teaspoon sugar
- 200g ramen noodles
- Coriander
- Beansprouts
- Edamame beans
- Spring onion
- Chili oil
Instructions
- Prepare the Chicken: Pour the flour onto a plate and evenly coat the chicken fillets. Heat a saucepan over medium heat, add olive oil, and fry the chicken for about 4 minutes on each side until golden. Then, remove from the pan and set aside.
- Make the Sauce: In the same pan, sauté the minced garlic, sliced sun-dried tomatoes, smoked paprika, chili flakes, and oregano for a couple of minutes. Pour in 300ml of chicken stock and the single cream, stirring well. Add the grated Parmesan and stir until melted and combined.
- Cook the Chicken: Return the chicken fillets to the pan, cover, and cook for an additional 5 minutes, allowing the flavors to infuse. Then, remove the chicken and slice it thinly.
- Prepare the Ramen: Season the sauce with salt, pepper, and sugar to taste. Add the remaining 300ml of chicken stock and bring to a simmer. Add the ramen noodles and cook according to the package instructions, usually a few minutes, until tender.
- Serve: Ladle the ramen and broth into two bowls. Arrange sliced chicken on top and garnish with coriander, beansprouts, spring onions, edamame beans, and a drizzle of chili oil. Sprinkle additional Parmesan if desired.
