Ingredients

2 cups dry pinto beans
1 tablespoon avocado oil
½ white onion, chopped
1½ teaspoons ground cumin
8 cups water, plus more as needed
½ teaspoon dried oregano
2 teaspoons sea salt, plus more to taste
Freshly ground black pepper
1 tablespoon fresh lime juice, plus more to taste
Optional: 1 jalapeño pepper, diced; Chili powder, to taste; Fresh cilantro, for garnish


Instructions

Sort and rinse pinto beans, soaking them overnight in a large bowl covered by 2-3 inches of water.
Heat avocado oil in a large pot, sauté onion (and jalapeño if using) until soft.
Add cumin, then the beans, water, oregano, salt, and pepper. Bring to a boil, then simmer uncovered until beans are tender.
Once tender, stir in lime juice, adjust seasonings with more salt, pepper, and chili powder if desired.
Garnish with cilantro before serving. Can be stored refrigerated or frozen.
