Instructions

Sushi Rice 🍚

  1. Rinse and Soak the Rice: Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. Transfer the rinsed rice to a large pot, cover it with water, and let it soak for 15 minutes.
  2. Cook the Rice: Bring the pot to a boil, then reduce the heat to a simmer. Cover with a lid and cook for 20 minutes, or until the rice is fully cooked. Remove the pot from heat and let the rice sit for 10 minutes.
  3. Season the Rice: Drizzle the rice vinegar over the cooked rice. Using a rubber spatula, gently fold the rice to evenly distribute the vinegar. Cover the rice lightly with a dish towel and allow it to cool to room temperature.

Salmon Mixture 🐟

  1. Prepare the Salmon: Remove the skin from the salmon and slice it into ½-inch cubes. In a small bowl, mix together Kewpie mayo, softened cream cheese, Sriracha, soy sauce, and green onions. Gently fold in the diced salmon and shredded imitation crab meat, being careful not to break up the fish pieces. Cover the mixture with plastic wrap and refrigerate.

Unagi Sauce 🍶

  1. Make the Sauce: In a small saucepan, combine soy sauce, mirin, sake, and sugar. Heat over medium heat until the mixture begins to boil. Reduce the heat and let it simmer for about 5 minutes, or until the sauce has thickened slightly. Remove from heat and allow it to cool.

Spicy Mayo 🌶️

  1. Mix the Mayo: In a small bowl, whisk together Kewpie mayo, Sriracha, fresh lime juice, and salt. Refrigerate until ready to use.

Assembly 📏

  1. Preheat the Oven: Set your oven to 425°F (220°C). Spray a baking dish with nonstick spray and line it with parchment paper.
  2. Layer the Rice: Pour the seasoned sushi rice into the prepared baking dish. Dip your hands in cold water and gently press the rice into the pan. Sprinkle with furikake for extra flavor.
  3. Add the Salmon Mixture: Spread the salmon mixture evenly over the top of the rice using a spatula.
  4. Bake: Place the dish in the oven and bake for 10-15 minutes. To achieve a caramelized top, turn on the broiler towards the end of baking, but keep an eye on it to avoid burning. Once done, remove from the oven and let it cool for 10 minutes.
  5. Serve and Garnish: You can serve the sushi bake directly from the pan or transfer it onto a wooden board. Drizzle with the prepared unagi sauce and spicy mayo. Garnish with sliced avocados, cucumbers, toasted sesame seeds, and sliced green onions. Serve with nori sheets for a fun DIY sushi experience.
