  • 1 lb Italian sausage (mild or spicy, as preferred)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • 16 oz potato gnocchi
  • 2 cups fresh spinach, roughly chopped
  • 1/4 cup grated Parmesan cheese, for garnish

Instructions

  1. Prepare the Sausage Heat olive oil in a large pot over medium heat. Add the sausage, breaking it into small pieces, and cook until browned. Remove and set aside.
  2. Sauté Onions and Garlic In the same pot, sauté the onion until softened, about 3-4 minutes. Add the garlic and cook for an additional minute, stirring frequently.
  3. Combine the Soup Base Pour in the chicken broth, diced tomatoes, heavy cream, Italian seasoning, and red pepper flakes. Return the cooked sausage to the pot, stir well, and bring to a gentle simmer.
  4. Cook the Gnocchi Add the gnocchi directly to the soup and cook for 3-4 minutes, or until they float to the top.
  5. Add Spinach and Season Stir in the spinach and let it wilt, about 1-2 minutes. Season the soup with salt and pepper to taste.
  6. Garnish and Serve Ladle the soup into bowls and sprinkle with grated Parmesan cheese before serving.
