1 tablespoon extra virgin olive oil
½ white onion, thinly sliced
3 cloves garlic, minced
1 pound Italian sausage
1 can (6 ounces) tomato paste
1 can (14.5 ounces) petite diced tomatoes
1 teaspoon Italian seasoning
½ teaspoon kosher salt
¼ teaspoon fresh cracked black pepper
½ cup cream cheese
1 cup chicken broth
1 cup heavy cream
¼ cup Parmesan cheese


Instructions

In a large pan over medium heat, add the olive oil. Once heated, add the sliced onions and cook until they begin to soften.
Add the minced garlic to the pan and cook for an additional minute until fragrant.
Add the Italian sausage to the pan, breaking it up with a spatula. Cook until the sausage is no longer pink, stirring frequently.
Stir in the tomato paste, petite diced tomatoes, Italian seasoning, salt, pepper, cream cheese, and chicken broth. Mix well to combine.
Gradually stir in the heavy cream and Parmesan cheese until fully incorporated into the soup.
Cover the pan with a lid, reduce the heat to low, and allow the mixture to simmer for 5 minutes, letting the flavors meld together.
Garnish the soup with freshly chopped parsley and a sprinkle of additional Parmesan cheese before serving.
