1 pound fresh oyster mushrooms
2 tablespoons olive oil
1 small shallot
1 tablespoon finely chopped soft herbs (chives, parsley, or tarragon)
1 tablespoon unsalted butter
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
Flaky salt, for serving (optional)


Instructions

Carefully pull apart oyster mushrooms into pieces, keeping smaller clusters intact and halving larger ones.
Heat olive oil in a large skillet over medium-high until shimmering.
Add mushrooms, stirring to coat with oil. Cook, stirring occasionally, until mushrooms are reduced and browned, about 7-8 minutes.
Finely chop shallot and herbs. Add to skillet with butter, salt, and black pepper.
Cook until shallot is softened and mushrooms are well browned, about 2-3 minutes.
Sprinkle with herbs and optional flaky salt before serving.
