Sautéed Sweet Potatoes
3 medium sweet potatoes
2 tablespoons olive oil
Salt to taste
Freshly ground black pepper to taste
1 tablespoon butter
Maple Chicken
1 lb chicken tenderloins
Salt and black pepper to taste
2 tablespoons olive oil
1 tablespoon maple syrup
1 tablespoon butter
¼ oz fresh thyme


Instructions

How to Sauté Sweet Potatoes:

Peel the sweet potatoes and slice each into thin round-shaped slices, about ½ inch thick.
Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Place sliced potatoes in a single layer in the skillet, season with salt and freshly ground black pepper.
Cook on medium heat for 5 minutes, then flip them over, reduce heat to medium-low, and cook for another 5 minutes.
Add 1 tablespoon of butter, stir to melt and coat the potatoes, then remove from heat.
How to Make Maple Chicken:

Season chicken tenderloins generously with salt and freshly ground black pepper.
Heat the skillet over medium heat for 3 minutes, then add 2 tablespoons of olive oil.
Add chicken and cook over medium heat for 5 minutes on one side until golden-brown, then flip over and continue cooking on medium-low heat for another 5 minutes or until cooked through.
Remove skillet from heat, add 1 tablespoon maple syrup and 1 tablespoon butter, stir to coat the chicken.
Combine maple chicken with the cooked sweet potatoes in the skillet, garnish with fresh thyme.
