- 1 cup uncooked long-grain white rice
- 1 can (10.5 oz) cream of chicken soup
- 4 boneless, skinless chicken fillets
- 1 can (10.5 oz) cream of mushroom soup
- 1 1/2 cups chicken broth
- 1 packet onion soup mix
- Salt and pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat your oven to 350F (175C). Lightly grease a 9×13-inch baking dish.
- Spread the uncooked rice evenly across the bottom of the greased baking dish.
- In a mixing bowl, combine the cream of chicken soup, cream of mushroom soup, and chicken broth. Whisk until the mixture is smooth.
- Pour half of the soup mixture over the rice in the dish.
- Place the chicken fillets over the rice. Season the chicken with salt and pepper according to your taste.
- Pour the remaining soup mixture over the chicken. Make sure the chicken is completely covered. Then, evenly sprinkle the onion soup mix on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 1 hour and 15 minutes. If a golden top is desired, remove the foil during the last 15 minutes of baking.
- Garnish the baked dish with chopped parsley before serving, if using.
