- 2 cups grated Gruyère cheese

- Caramelize the Onions: In a large pot, combine the unsalted butter with olive oil over medium heat. Add the thinly sliced onions and cook them, stirring frequently until they are deep golden brown and thoroughly caramelized, approximately 40 minutes.
- Add Broth and Wine: Stir in the dry white wine into the pot, ensuring to scrape up any browned bits from the pot’s bottom. Add the beef broth, fresh thyme sprigs, and bay leaves. Bring the mixture to a boil, then lower the heat to let it simmer for about 20 minutes. Season with salt and pepper according to your taste.
- Prepare the Baguette: While the soup simmers, preheat your oven to 400°F (200°C). Place the baguette slices on a baking sheet and toast them in the preheated oven until they turn golden brown, around 5-7 minutes.
