- 6 x 300 – 350g / 10 – 12 oz beef ribs, patted dry
- 1 tbsp brown sugar (sub white)
- 2 tsp paprika
- 1 tsp garlic powder (sub 1 tsp fresh garlic)
- 1 tsp onion powder (sub garlic powder)
- 1/2 tsp cumin powder
- 3/4 tsp mustard powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 garlic cloves, minced (sub 2 tsp powder)
- 1/2 cup apple cider vinegar
- 1 1/2 cups ketchup, or Aussie tomato sauce
- 1/2 cup brown sugar, loosely packed (sub white)
- 2 tsp EACH black pepper, onion powder, mustard powder
- 1 tsp cayenne pepper (adjust to taste re: spiciness)
- 1 tbsp Worcestershire sauce (sub soy sauce)
- 2 cups water
- Optional garnish: Parsley or chives, chopped
Instructions
- Step 1: Prepare and Rub the Beef Ribs Preheat your oven to 160°C/320°F. In a small bowl, combine all the ingredients for the rub. Firmly press the rub into both sides of the beef ribs, ensuring complete coverage, and then shake off any remaining excess rub.
- Step 2: Prepare the BBQ Sauce In a baking pan, mix together all the ingredients for the barbecue sauce except the water. Once uniformly combined, slowly stir in the water until the mixture is well blended.
- Step 3: Coat Ribs and Bake Place the rubbed ribs into the pan with the barbecue sauce, turning them to fully coat each piece. Arrange them meat side down, leaving the bone side up. Cover the pan tightly with foil or a lid and bake for 3 1/2 hours.
- Step 4: Uncover and Caramelize After baking, remove the foil and turn the ribs over, basting them with additional sauce. Return the pan to the oven, uncovered, for another 30 minutes, halfway through basting again, until the surface of the ribs is beautifully caramelized and sticky.
- Step 5: Finish and Serve Check the tenderness of the ribs with a fork; they should readily pull apart if fully tender. Transfer the ribs carefully to a serving plate and stir the remaining sauce well before serving it alongside the ribs. Garnish optionally with chopped parsley or chives.
