  • 1 14 oz smoked sausage link/rope (like Hillshire Farm)
  • 2 teaspoons smoked paprika
  • 2.5 teaspoons Creole Seasoning
  • 1 lb raw shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup Worcestershire sauce
  • 1/4 cup heavy cream
  • 2 teaspoons fresh lemon juice
  • Green onions or fresh parsley for garnish
  • 2 cups chicken or vegetable broth
  • 2 cups milk or half & half
  • 1 cup grits
  • 4 tablespoons butter
  • 2 teaspoons salt (optional)

Instructions

  1. Mix the Creole seasoning and smoked paprika together and season the shrimp evenly. Set aside to marinate as you prepare other ingredients.
  2. Slice the sausage into small rounds and sauté in a large skillet over medium heat until browned on both sides. Remove the sausage from the skillet, retaining the drippings for cooking other ingredients.
  3. In the same skillet, melt butter. Add diced onions and cook until they turn translucent. Add garlic and stir until its aroma releases.
  4. Add the seasoned shrimp to the skillet, cooking just until they turn pink. Remove shrimp and set aside with the sausage.
  5. Pour chicken broth and Worcestershire sauce into the skillet to deglaze, scraping up any browned bits. Boil briefly before reducing to a simmer and stirring in heavy cream.
  6. Return the shrimp and sausage to the skillet. Stir in lemon juice and simmer until the sauce thickens and coats the ingredients well.
  7. In a separate pot, bring broth and milk to a boil. Gradually stir in grits and reduce heat. Cover and simmer, stirring occasionally, until grits are creamy.
  8. Ladle creamy grits onto plates and top with the shrimp and sausage mixture. Garnish with chopped green onions or parsley.
