- 12 ounces andouille sausage, sliced into 1/2-inch thick coins
- 1 red bell pepper, diced
- 2 ribs celery, diced
- 1 yellow onion, diced
- 2 tablespoons Cajun or Creole seasoning
- 1 (14.5-ounce) can diced tomatoes
- 2/3 cup chicken stock
- 2 bay leaves
- 1 pound shrimp, peeled if desired
- Sea salt, to taste
- Freshly ground black pepper, to taste
- Fresh parsley and/or chives, for serving
Instructions
- Brown the Sausage: Place the ghee in the Instant Pot and set to Sauté mode. Once hot, add the sausage slices and cook for 2-3 minutes per side until browned. Use a slotted spoon to transfer the sausage to a plate.
- Sauté Vegetables and Seasoning: Add the diced red bell pepper, celery, onion, and Cajun seasoning to the Instant Pot. Sauté for 1-2 minutes until the mixture becomes fragrant.
- Combine Ingredients and Cook: Press the Keep Warm/Cancel button. Add the browned sausage, diced tomatoes, chicken stock, and bay leaves back to the pot. Stir well to combine all the ingredients. Close the lid, ensure the valve is set to sealing, and cook on Manual high pressure for 5 minutes.
- Release Pressure and Add Shrimp: Once cooking is complete, carefully turn the valve to Venting to release the pressure manually. Remove the lid and set the Instant Pot to Sauté mode again. Add the shrimp and cook for 3-4 minutes, or until they are opaque throughout.
- Season and Serve: Season the stew with sea salt and freshly ground black pepper. Serve hot, garnished with freshly chopped parsley or chives. This dish pairs well with rice or cauliflower rice, depending on your preference.
