- 4 eggs
- 2 1/2 cups all-purpose flour
- 1/4 cup ground flaxseed
- 1 tsp garlic powder
- 1/2 tsp red pepper flakes
- 1 tbsp baking powder
- 2 tsp salt
- 1.5 cups chopped spinach
- 1/2 cup finely diced chives
- 1.5 cups shredded cheddar cheese, divided
Instructions
- Preheat the oven to 400°F (204°C) and line a baking tray with parchment paper to prepare for baking.
- In a medium mixing bowl, whisk together the Greek yogurt and eggs until the mixture is smooth and creamy.
- In a separate bowl, combine the flour, ground flaxseed, garlic powder, red pepper flakes, baking powder, and salt, ensuring they are well mixed.
- Gradually add the dry ingredients to the wet mixture, stirring continuously until fully incorporated.
- Fold in the chopped spinach, diced chives, and 1 cup of the shredded cheddar cheese into the batter. Use your hands if necessary to ensure even distribution of the ingredients.
- With lightly floured hands, shape the dough into 12 round biscuits, using roughly 1/3 cup of batter for each. Arrange them on the prepared baking tray with ample space between each.
- Sprinkle the remaining cheese over the biscuits and place them in the oven. Bake at 400°F for 5 minutes, then reduce the temperature to 350°F (177°C) and continue baking for 20 more minutes without opening the oven door.
