1 small onion, diced
2 cloves garlic, minced
½ cup (65g) all-purpose flour
2 tablespoons tomato paste
2 teaspoons Cajun seasoning
1 teaspoon Old Bay seasoning
1 quart (945ml) heavy cream
1 quart (945ml) whole milk
pounds (680g) raw seafood of choice


Instructions

In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion and minced garlic, sautéing until the onion begins to soften and becomes translucent.
Whisk in the flour, tomato paste, Cajun seasoning, and Old Bay seasoning, stirring constantly to create a smooth paste.
Gradually whisk in the heavy cream and whole milk, ensuring the mixture remains smooth and lump-free.
Bring the soup to a gentle boil, then stir in the raw seafood of your choice.
Reduce the heat to a simmer and cook for 10 minutes, allowing the seafood to cook through and the flavors to meld together.
Serve the bisque hot, garnished with fresh herbs or a sprinkle of additional Cajun seasoning if desired.
