7 potatoes, washed, skin on
¼ cup unsalted butter, melted
1 teaspoon olive oil
⅛ teaspoon sea salt, to taste
⅛ teaspoon ground black pepper, to taste
¼ cup Parmesan cheese, grated
1 teaspoon dried oregano
1 tablespoon garlic, minced
1 teaspoon smoked paprika


Instructions

Preheat oven to 400°F (200°C). Grease a large baking dish.
In a small bowl, combine melted butter and olive oil.
Clean and pat dry the potatoes. Place a potato on a cutting board between two chopsticks and slice not all the way through. Repeat with all potatoes.
Arrange the potatoes cut-side up in the prepared baking dish. Brush with the butter and oil mixture, ensuring it gets between the slices.
Mix salt, pepper, Parmesan, oregano, garlic, and paprika in a bowl. Sprinkle over and between the potato slices.
Bake in the preheated oven for 60 minutes, or until potatoes are tender, basting occasionally with the pan juices.
Let rest for 5 minutes before serving.
