1 1/2 lb large shrimp, peeled
1 bunch fresh asparagus
4 tbsp olive oil, divided
5 cloves garlic, minced
1 whole red onion, sliced
1/2 tbsp each oregano and smoked paprika
1 tsp sea salt
Ground black pepper, to taste
1 whole lemon, juiced
1 cup black olives, pitted
1 cup feta cheese, crumbled
1/3 cup fresh cilantro or parsley, chopped


Instructions

Preheat the Oven: Preheat your oven to 450°F (232°C).
Season the Shrimp: In a large bowl, combine the shrimp with 2 tablespoons of olive oil, minced garlic, salt, black pepper, smoked paprika, oregano, and the juice of one lemon. Toss to coat the shrimp evenly with the seasoning.
Prepare the Asparagus: Trim and wash the asparagus. Lay the asparagus spears flat on a large baking sheet. Drizzle with 1 tablespoon of olive oil and season lightly with salt and pepper.
Assemble the Sheet Pan: Arrange the seasoned shrimp on top of the asparagus, then scatter the sliced red onions over the shrimp and asparagus.
Bake: Place the sheet pan in the middle rack of the preheated oven. Bake for 10 minutes, or until the shrimp are cooked through and the edges begin to turn golden brown.
Add Toppings: Remove the sheet pan from the oven. Immediately top with crumbled feta cheese, black olives, and chopped fresh cilantro or parsley. Drizzle with the remaining 1 tablespoon of olive oil.
Serve: Serve the Mediterranean shrimp and asparagus directly from the sheet pan, ensuring each portion gets a generous topping of feta, olives, and herbs.
