Ingredients:

  • 2 tablespoons olive oil, divided
  • 8 ounces shiitake mushrooms, thinly sliced
  • 2 tablespoons grated or minced fresh ginger
  • 4 cloves garlic, pressed or minced
  • 6 cups vegetable broth
  • 2 tablespoons soy sauce
  • 16 to 20 ounces frozen potstickers
  • 5 scallions, thinly sliced and divided
  • 3 baby bok choy, ends trimmed off and leaves separated
  • 2 teaspoons toasted sesame oil
  • Freshly-ground black pepper
  • Optional toppings: chili crisp, toasted sesame seeds, furikake seasoning, fried garlic

Directions:

1. Sauté the Mushrooms: In a large stockpot, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the thinly sliced shiitake mushrooms. Sauté them, stirring occasionally, until they become nicely browned and their natural flavors are enhanced.

2. Add Aromatics: To the sautéed mushrooms, add the remaining tablespoon of olive oil, followed by the minced garlic and ginger. Sauté the mixture for an additional 1-2 minutes, until the garlic and ginger are fragrant and infused into the mushrooms.

3. Simmer the Soup: Pour in the vegetable broth and soy sauce, stirring well to combine all the ingredients. Increase the heat to bring the mixture to a boil. Once boiling, carefully add the frozen potstickers, half of the thinly sliced scallions, and the separated bok choy leaves. Reduce the heat slightly and allow the soup to cook for 3-4 minutes, or until the potstickers are heated through and tender.

4. Final Touches: Once the potstickers are cooked, stir in the toasted sesame oil for a rich, nutty flavor. Season the soup with freshly-ground black pepper to taste.

5. Serve: Ladle the hot soup into bowls, garnishing with the remaining scallions and any of your favorite optional toppings such as chili crisp, toasted sesame seeds, furikake seasoning, or fried garlic for an added crunch.
