Description

1 pound large shrimp, thawed
2 cups shredded lettuce
¼ red onion, diced
2 avocados, sliced
1 tablespoon chopped cilantro
Dressing:

3 tablespoons extra-virgin olive oil
3 tablespoons lime juice
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon fresh cracked pepper


Instructions

Bring a large pot of water to a boil, then lower the heat to medium. Place the shrimp in a steamer insert or mesh strainer on top of the pot of water and cover with a lid. Steam until the shrimp curl and turn bright pink, approximately 4-6 minutes. Remove and set aside to cool.
In a large bowl, whisk together the olive oil, lime juice, cumin, salt, and pepper until emulsified to make the dressing.
Add the cooled shrimp, shredded lettuce, and red onions to the bowl with the dressing. Gently toss to combine.
Carefully arrange the sliced avocados around the salad and garnish with fresh cilantro.
Serve at room temperature or chilled for a refreshing meal.
