Ingredients

For the Shrimp:

  • 1 lb large raw shrimp, peeled and deveined
  • 1 teaspoon smoked paprika
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 5 cloves garlic, minced
  • 2 tablespoons olive oil

For the Orzo and Sauce:

  • ⅓ cup sun-dried tomatoes, chopped
  • 1 cup uncooked orzo
  • 2 cups chicken stock
  • ¼ teaspoon salt
  • 14 oz artichoke hearts, drained and chopped
  • 4 oz fresh spinach
  • 1 cup heavy cream

Directions

To Sear the Shrimp:

  1. Season the Shrimp: In a bowl, toss the shrimp with smoked paprika, Italian seasoning, salt, and pepper.
  2. Cook: Heat olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and minced garlic, and cook for about 2 minutes per side or until the shrimp are pink and slightly golden. Remove the shrimp from the skillet and set aside.

To Cook the Orzo:

  1. Prepare the Skillet: Using the same skillet, add a bit more olive oil if needed, along with the sun-dried tomatoes and orzo. Sauté for about 2 minutes until the orzo starts to brown slightly.
  2. Simmer: Pour in the chicken stock and add salt. Bring the mixture to a boil, then reduce to a simmer. Let it cook until the orzo is tender, approximately 5-10 minutes.
  3. Add Vegetables and Cream: Stir in the chopped artichokes and fresh spinach. Once the spinach begins to wilt, pour in the heavy cream and mix well.
  4. Combine: Return the cooked shrimp to the skillet. Simmer everything together for a few minutes until the shrimp are heated through. Season with additional salt and pepper to taste.
