Ingredients

1/4 cup vegetable oil
1 cup jasmine rice, washed
2 cups water
1 medium onion, finely chopped
3 cloves of garlic, minced
Pinch of salt


Instructions

Bring water to a boil in a tea kettle.
In a large pot, heat vegetable oil over medium-high heat.
Add chopped onion and minced garlic; sauté until translucent, being careful not to burn.
Add washed rice and stir occasionally, cooking until it starts forming clumps.
Pour boiling water over the rice, add salt, cover, and reduce heat to the lowest setting.
Cook for 20 minutes, or until all water is absorbed (look for holes forming on the surface of the rice).
Turn off the heat, slightly lift the lid, and let sit for 5 more minutes.
Fluff the rice with a fork and serve.
