Ingredients

1 slice crusty bread, sourdough or another type
Misha’s new vegan ricotta, as much as you desire
1 handful of cherry tomatoes
1 handful of arugula
2 tsp olive oil
A pinch of salt


Instructions

Toast your slice of bread until golden and crispy.
In a small frying pan, heat olive oil and add cherry tomatoes. Cook until they are slightly blistered, then season with a pinch of salt.
Generously spread vegan ricotta over the toasted bread.
Top the ricotta with the cooked cherry tomatoes and fresh arugula.
Finish with a grinding of fresh pepper over the top.
