Ingredients
½ large sweet potato
Cooking spray
Salt and pepper to taste
Instructions
Using a large sharp knife, slice the sweet potato lengthwise down the middle. Make 4-5 thin slices about 1/4″-1/3″ thick from the middle of the sweet potato, keeping the skin on for added texture.
Spray sweet potato slices with cooking spray and season with salt and pepper.
Toaster Instructions: Insert slices into a toaster on high setting. Toast until slices are fork tender. Adjust the setting to medium if needed for even cooking.
Oven Instructions: Preheat oven to 350 F. Place slices on a wire rack over a rimmed baking sheet. Bake for 15-20 minutes until slices are fork tender but still slightly firm. Allow to cool on a wire rack before serving.
