2 tablespoons oil
250 g ground beef
2 tablespoons soy sauce
1 teaspoon grated ginger
2 teaspoons white pepper powder (adjust to your liking)
2 tablespoons corn flour (also called corn starch)
2 tablespoons spring onion (chopped)
120 g vermicelli (more or less for two)
2 tablespoons Chinese dark vinegar (optional)
2 tablespoons Chinese chilli oil (optional)


Instructions

In a saucepan, heat the oil over medium heat. Add the ground beef and break it apart. Cook until slightly browned.
Stir in the grated ginger and soy sauce; fry for 10-15 seconds. Add 1 cup of water and the white pepper powder. Cover and simmer for 10 minutes, adding more water if it evaporates too much.
Meanwhile, boil the vermicelli in a large pot of boiling salted water according to the package instructions until al dente. Drain and set aside.
Mix the corn flour with 1/2 cup of water and stir into the beef sauce until evenly thickened.
Toss the cooked noodles with the beef sauce, garnish with spring onions, and drizzle with Chinese dark vinegar and chilli oil if using.
