The Crispy Layered Mexican Pizza combines traditional Mexican flavors with the comforting structure of a pizza, creating a meal that is both familiar and exciting. Layers of crispy tortillas, spicy taco meat, and creamy refried beans are topped with melted cheddar, offering a perfect blend of textures and tastes.

FOR THE TORTILLAS:
1/4 cup vegetable oil
16 corn tortillas (6-inch)
FOR THE MEXICAN PIZZAS:
2 cups warmed refried beans (16 ounce can)
1 teaspoon vegetable oil
1 pound ground beef
1 tablespoon taco seasoning
2 cups enchilada sauce (or taco sauce)
8 ounces shredded cheddar cheese
Toppings: Diced tomato, sliced black olives, green onion, hot sauce
Salt to taste


Instructions

To make the crispy tortillas, heat the vegetable oil in a pan over medium heat. Fry the tortillas, 1-2 at a time, for 2-3 minutes each side, until golden and beginning to crisp. Drain on paper towels and season with salt.
Preheat oven to 350°F (175°C).
For the filling, heat 1 teaspoon oil in another pan over medium heat. Cook the ground beef for 6-7 minutes, or until done. Stir in taco seasoning and 1/4 cup water; simmer for 10 minutes.
Assemble the pizzas by layering a tortilla, enchilada sauce, refried beans, and taco meat on a baking sheet. Top with another tortilla, more sauce, and shredded cheese.
Bake for 10 minutes or until the cheese melts.
Finish with your chosen toppings and serve.
