2 Tablespoons olive oil
2 ½ to 3 pounds beef chuck roast
Kosher salt
Freshly ground pepper
2 (1-ounce) packages dry onion soup mix
2 cups water
2 (14.5-ounce) cans beef broth
68 slices Swiss or provolone cheese
68 crusty rolls (ciabatta recommended)


Instructions

Heat olive oil in a large skillet over medium-high heat. Season the beef chuck roast with kosher salt and freshly ground pepper generously.
Sear the roast on all sides in the hot oil until browned, approximately 1-2 minutes per side.
Transfer the seared roast and pan juices into a slow cooker. Sprinkle the dry onion soup mix over the roast, then add water and beef broth.
Cook on high for 4-6 hours or on low for 8-10 hours until the meat is tender and easily shreds with a fork.
Remove the roast, shred the meat, and assemble the sandwiches with Swiss or provolone cheese on ciabatta rolls.
Broil sandwiches until the cheese melts and the rolls are toasty. Serve with the slow cooker juices for dipping.
