For the Chicken:
1.5 lbs chicken breasts
1 red bell pepper, diced
1/2 large yellow onion, diced
2 garlic cloves, chopped
For the Sauce:
1/2 cup peanut butter (creamy or crunchy, with minimal ingredients)
1/2 cup chicken broth
1/4 cup soy sauce
1 tablespoon honey
1 teaspoon sesame oil
1 teaspoon chili garlic paste
1 tablespoon lime juice
2 tablespoons cilantro, chopped


Instructions

Add the diced bell pepper, onion, and chopped garlic to the bottom of your slow cooker. Place the chicken breasts on top of the vegetables.
In a bowl or measuring cup, whisk together the peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until smooth.
Pour the peanut sauce over the chicken and vegetables in the slow cooker.
Cook on HIGH for 2-3 hours or on LOW for 4-5 hours, until the chicken is cooked through and tender.
Once cooked, remove the lid and stir in the lime juice and chopped cilantro.
Serve the peanut chicken over rice, noodles, or with your favorite sides, and enjoy!
