Ingredients

1 (32 oz.) bag of hash browns (or substitute fresh diced potatoes)
14 oz. kielbasa sausage, cut into small pieces
1 small onion, diced
2 1/2 cups shredded cheddar cheese
1 (10.5 oz.) can cream of mushroom soup
1/2 cup sour cream
1 tsp creole seasoning (or your favorite seasoning blend)
Salt and pepper to taste


Instructions

In a greased slow cooker, combine the hash browns, kielbasa, onion, and 2 cups of the cheddar cheese.
In a separate bowl, mix the cream of mushroom soup, sour cream, creole seasoning, salt, and pepper.
Pour the soup mixture over the hash brown mix and stir until well combined.
Sprinkle the remaining 1/2 cup of cheddar cheese on top.
Cover and cook on low for 6 hours or on high for 4 hours, until the potatoes and onions are tender. Be careful not to overcook the potatoes.
