Smoky Cheesy Chicken-Potato Casserole

For the casserole:

4 cups potatoes, diced 🥔
2 cups cooked chicken, shredded 🍗
1 cup chicken broth 🥣
1 cup shredded cheddar cheese 🧀
1 cup shredded mozzarella cheese 🧀
1 cup milk 🥛
1/2 cup sour cream 🍶
1/2 cup green onions, chopped 🧅
1/4 cup turkey bacon, cooked and crumbled 🥓
2 tbsp butter 🧈
2 tbsp flour 🌾
1 tsp smoked paprika 🌶️
Salt and pepper to taste 🧂


Instructions

1️⃣ Preheat your oven to 350°F (175°C). 🔥

2️⃣ Cook the diced potatoes in boiling water until tender, about 10 minutes. Drain and set aside. 🍲

3️⃣ In a large skillet, melt the butter over medium heat. Add flour and whisk until smooth. Gradually add chicken broth and milk, whisking constantly until the sauce thickens. 🥄

4️⃣ Stir in sour cream, smoked paprika, salt, and pepper. Mix in the shredded cheddar and mozzarella cheeses until melted and smooth. 🧀

5️⃣ Add the cooked chicken, green onions, and turkey bacon to the sauce. Mix well. 🍗🥓

6️⃣ Gently fold in the cooked potatoes until evenly coated with the sauce. 🥔

7️⃣ Transfer the mixture to a greased 9×13-inch baking dish. Spread evenly. 🍽️

8️⃣ Bake in the preheated oven for 25-30 minutes, until bubbly and golden brown. ⏳
