Cookies:
2/3 cup (150g) plant-based butter, softened
2 cups (240g) powdered sugar
2 large eggs, room temperature
2 tsp orange extract
Zest from 1 large navel orange
1 tsp baking powder
1 tsp baking soda
1/4 cup (32g) corn starch
2 3/4 cups (358g) unbleached all-purpose flour
Icing:
2 cups + 2 tbsp (255g) powdered sugar
1 tsp orange extract
3 tbsp orange juice
Zest from 12 large navel oranges


Instructions

Prepare: Preheat oven to 350°F (177°C). Bring eggs to room temperature by placing them in warm water for 10 minutes. Line a baking sheet with parchment paper.
Cookie Dough: In a large bowl, beat the softened butter and powdered sugar until fluffy. Beat in the eggs, orange extract, and zest. Add baking powder, baking soda, and corn starch. Gradually mix in the flour until the dough is just combined. Let it rest at room temperature for 15 minutes.
Baking: Scoop the dough into 3 tbsp sized balls, place on the baking sheet, and flatten slightly. Bake for 9-10 minutes until lightly golden. Allow to cool on the baking sheet for 1 minute before transferring to a cooling rack.
Icing: Whisk together powdered sugar, orange extract, and juice until smooth. Spoon over cooled cookies and sprinkle with orange zest. Allow icing to set before storing.
