3/4 cup butter, softened
1 cup granulated sugar
1 egg + 1 egg yolk
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 (3.5 oz) packet instant vanilla pudding mix
2 cups all-purpose flour
1/2 cup sprinkles


Instructions

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
In the bowl of a stand mixer fitted with the paddle attachment, beat the softened butter and sugar on medium speed for 2 minutes, until light and fluffy.
Add in the egg, egg yolk, vanilla extract, baking soda, and salt. Mix until well combined, scraping down the sides of the bowl as needed.
Add the instant vanilla pudding mix and mix for 30 seconds until fully incorporated.
With the mixer on low speed, add in the flour, mixing until just combined.
Gently fold in the sprinkles and mix until evenly distributed throughout the dough.
Using a medium (2-tablespoon) cookie scoop, drop the dough onto the prepared baking sheet, spacing them 2 inches apart.
Bake the cookies for 8-10 minutes, or until the edges are just set but the centers are still slightly soft. For extra soft cookies, be careful not to over-bake.
Let the cookies cool on the baking sheet for 3 minutes before transferring them to a wire rack to cool completely. Enjoy!
