Ingredients
1 medium-size sweet onion, finely chopped π§
2 tablespoons olive oil π«
1 garlic clove, minced π§
1 tablespoon ginger paste π±
2 habanero peppers, seeded and finely chopped πΆοΈ*
1 1/2 cups ketchup π
2 large peaches, peeled and chopped π
1/2 cup peach preserves π
2 tablespoons apple cider vinegar π
Instructions
1οΈβ£ Cook the finely chopped onion with olive oil in a medium saucepan over medium heat until the onion is softened and translucent, about 5 minutes. π§ π«
2οΈβ£ Add the minced garlic, ginger paste, and finely chopped habanero peppers. Cook for 1 minute, stirring constantly, or until fragrant. π§π±πΆοΈ
3οΈβ£ Add the ketchup, peeled and chopped peaches, and peach preserves. Bring the mixture to a boil, then reduce the heat to low. Simmer for 45 minutes, stirring occasionally. π π
4οΈβ£ Remove the saucepan from heat and stir in the apple cider vinegar. π
5οΈβ£ Carefully puree the sauce in a blender (in 2 batches if needed). Be cautious not to fill the blender full with hot liquids to prevent expansion out the top of the blender.
