Ingredients
1 medium-size sweet onion, finely chopped 🧅
2 tablespoons olive oil 🫒
1 garlic clove, minced 🧄
1 tablespoon ginger paste 🌱
2 habanero peppers, seeded and finely chopped 🌶️*
1 1/2 cups ketchup 🍅
2 large peaches, peeled and chopped 🍑
1/2 cup peach preserves 🍑
2 tablespoons apple cider vinegar 🍏
Instructions
1️⃣ Cook the finely chopped onion with olive oil in a medium saucepan over medium heat until the onion is softened and translucent, about 5 minutes. 🧅🫒
2️⃣ Add the minced garlic, ginger paste, and finely chopped habanero peppers. Cook for 1 minute, stirring constantly, or until fragrant. 🧄🌱🌶️
3️⃣ Add the ketchup, peeled and chopped peaches, and peach preserves. Bring the mixture to a boil, then reduce the heat to low. Simmer for 45 minutes, stirring occasionally. 🍅🍑
4️⃣ Remove the saucepan from heat and stir in the apple cider vinegar. 🍏
5️⃣ Carefully puree the sauce in a blender (in 2 batches if needed). Be cautious not to fill the blender full with hot liquids to prevent expansion out the top of the blender.
