1 package Athens Mini Fillo Shells 🥧
9 cups chopped baby spinach 🌱
2 tbsp butter 🧈
1 tbsp olive oil 🫒
½ medium onion, minced 🧅
2 garlic cloves, minced 🧄
Salt and pepper to taste 🧂
Egg Mixture:
2 eggs 🥚
½ cup good quality feta cheese crumbles 🧀
⅓ cup Parmesan cheese, grated 🧀
¼ cup chopped dill 🌿
Instructions
1️⃣ Preheat your oven to 350°F (175°C). 🔥
2️⃣ Sauté the onion in olive oil and butter over medium heat for about 3-4 minutes until softened. 🧅
3️⃣ Add the minced garlic and chopped spinach to the pan, and sauté for another 5 minutes, until there is no liquid remaining. Season with salt and pepper to taste. 🧄🌱
4️⃣ Transfer the spinach mixture onto a plate and place it in a cold place for a few minutes to cool slightly. 🌬️
5️⃣ In a separate bowl, prepare the egg mixture by whisking together the eggs, feta cheese, Parmesan cheese, and chopped dill. 🥚🧀🌿
6️⃣ Combine the cooled spinach mixture with the egg mixture, stirring until well combined. 🍳
7️⃣ Divide the filling between the 15 Fillo shells. 🥧
8️⃣ Bake the Spanakopita Bites in the preheated oven for 15 minutes. ⏳
