Ingredients

2 lbs boneless skinless chicken thighs (900g)

Marinade:

3 tbsp fresh lemon juice
3 tbsp olive oil
4 cloves garlic, minced
2 tsp fine salt
2 tsp black pepper
4 tsp ground cumin
4 tsp ground coriander
2 tsp paprika
1 tsp turmeric
1/2 tsp ground cloves
1/2 tsp cayenne pepper (adjust to taste)


Instructions

Combine marinade ingredients in a large ziplock bag with chicken thighs. Marinate for 1 – 8 hours, ideally overnight.
Preheat grill to medium-high heat. Remove chicken from marinade and place on grill. Cook for 3-4 minutes on each side or until internal temperature reaches 165°F (74°C).
For stovetop cooking, use a cast iron skillet, cooking each side for 4-6 minutes until fully cooked.
To bake, preheat oven to 400°F (204°C), place chicken on a parchment-lined sheet pan, and bake for 25-35 minutes until done.
