  • 14 oz (400g) sirloin steak, thinly sliced
  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 7 oz (200g) broccoli florets
  • 3 cloves garlic, minced
  • 2 tsp ginger, minced
  • 6 tbsp lime juice
  • 6 tbsp dark soy sauce
  • 6 tbsp sugar
  • 12 red chilies, finely chopped (+ more for garnish)
  • 4 spring onions, cut into 2 cm pieces (+ more for garnish)
  • 14 oz (400g) fresh egg noodles
  • Chili flakes, chopped chilies, and spring onions for garnish

Instructions

  1. In a large bowl, toss the sliced sirloin steak with cornstarch, salt, and black pepper until evenly coated.
  2. Heat 1 tablespoon of vegetable oil in a skillet or wok over medium-high heat. Add the steak slices and stir-fry for 2-3 minutes until browned and crispy. Remove the steak from the pan and set it aside.
  3. In the same skillet, add the remaining oil and stir-fry the red bell pepper and broccoli florets for 3-4 minutes until they are softened.
  4. Add the minced garlic and ginger to the skillet and cook for an additional minute until fragrant.
  5. In a small bowl, whisk together the lime juice, soy sauce, and sugar until the sugar is dissolved.
  6. Return the cooked steak to the skillet and pour the sauce over the beef and vegetables. Add the chopped chilies and spring onions, stirring to coat everything evenly.
  7. Toss in the fresh egg noodles, mixing until they are well coated and heated through.
  8. Garnish with chili flakes, chopped chilies, and additional spring onions before serving.
