  • Freshly ground black pepper, to taste
  • ½ teaspoon ground white pepper
  • 8 cups chicken broth
  • 2 teaspoons Better than Bouillon chicken base
  • 2 pounds red potatoes, washed and sliced thin
  • 1 cup heavy cream
  • 4 cups baby kale, arugula, or spinach

Instructions

  1. Cooking the Sausage Heat a large pot over medium-high heat. Add the sausage, breaking it apart as it cooks, until browned (about 5 to 6 minutes). If there’s excess grease, consider draining half.
  2. Adding Aromatics Add the chopped onion and garlic to the pot with the sausage. Continue cooking for 3 to 4 minutes until the onion turns translucent and the mixture becomes fragrant. Season with red pepper flakes, Kosher salt, black pepper, and white pepper.
  3. Simmering the Soup Pour the chicken broth into the pot and stir in the chicken base. Add the sliced potatoes. Make sure the liquid covers all the ingredients by adding more broth or water mixed with chicken base, if necessary. Bring the mixture to a boil, then reduce the heat to medium and let simmer for 35 to 40 minutes until the potatoes are tender.
  4. Finishing Touches Stir in the heavy cream and reduce the heat to low. Adjust the seasoning with salt and pepper as needed. Let the soup cook gently for another 5 minutes to meld the flavors together.
