  • 3 garlic cloves, minced (1 tablespoon)
  • 1 tablespoon finely chopped fresh rosemary
  • 1/4 cup fresh lemon juice (from 1 lemon), rinds reserved and sliced
  • 1/4 cup Worcestershire sauce
  • 1 tablespoon cream (optional)
  • 1 1/2 teaspoons hot sauce, such as Tabasco
  • 1 pound (about 30) medium to large shrimp, peeled
  • 1/2 teaspoon coarse salt
  • Freshly ground pepper

Instructions

  1. Prepare the Shrimp Heat a 12-inch skillet over medium-high heat. Season the shrimp with salt and pepper. Add 1 tablespoon of butter to the skillet. Once melted and foamy, add the shrimp and fry until they are evenly golden and crisp, approximately 2-3 minutes per side. Then, transfer the shrimp to a separate bowl and set aside.
  2. Create the Flavor Base In the same skillet, combine the minced garlic, chopped rosemary, lemon juice, and lemon rinds. Stir in the Worcestershire sauce and bring the mixture to a simmer. Allow it to cook for about 10 minutes, or until the flavors are well combined.
  3. Finish the Sauce Remove the skillet from heat and strain out the solids, discarding them. Return the cleared sauce to the skillet and set over low heat. Gradually add the remaining pieces of butter, stirring constantly until each piece is fully incorporated and the sauce becomes smooth and creamy. If using, stir in the cream to add richness.
  4. Combine and Serve Add the cooked shrimp back into the skillet, tossing to coat thoroughly in the sauce and ensure they are warmed through. Serve immediately, ideal with fresh baguette slices for dipping or over a bed of rice for a more filling meal.
