Ingredients
3 tablespoons olive oil
1 large yellow onion, roughly chopped
3 garlic cloves, roughly chopped
1–2 jalapeños thinly sliced (depending on spice preference)
1 whole raw chicken
2 cans white beans, rinsed and drained
8 cups chicken broth
Juice of 1 lime
Kosher salt, to taste
Fresh jalapeño slices, for garnish
Freshly chopped cilantro, for garnish
1 lime, cut into wedges, for serving
Instructions
Heat the olive oil in a large pot over medium-high heat. Add the onions, garlic, and jalapeño slices. Season with kosher salt and sauté for 5-7 minutes until the vegetables are tender and lightly browned.
Place the whole chicken in the pot and cover with chicken broth. Cover the pot and reduce heat to low. Simmer for 60 minutes.
Remove the chicken and let it cool. Meanwhile, blend the broth with cooked vegetables in a blender until smooth.
Return the pureed broth to the pot. Add the lime juice and white beans.
Debone and shred the chicken, then add it back to the pot. Stir well and adjust seasoning with salt.
Bring the soup to a simmer. Serve hot, garnished with fresh jalapeño slices, cilantro, and a lime wedge.
