8 tablespoons salted butter, melted
3 pounds Yukon Gold Potatoes, peeled
Salt and pepper
1/2 to 1 cup chicken broth
1 teaspoon honey
1/2 teaspoon cayenne pepper
2 tablespoons olive oil or vegetable oil
2 cloves garlic, smashed


Instructions

Preheat oven to 475°F.
Square off ends of potatoes and cut into 3/4-inch to 1-inch slices.
Heat a large cast iron pan over medium-high heat. Add the oil and half the melted butter.
Place potato slices in a single layer in the pan. Season with salt and pepper. Sauté for 5 minutes to brown the bottoms.
Remove from heat, flip each potato slice over.
Mix the remaining butter with honey and cayenne pepper, then pour over the potatoes.
Bake in the oven for 15 minutes, then flip slices again. Add chicken broth to come about 3/4 way up the potatoes, and add smashed garlic.
Return to oven and bake for another 15 minutes.
Spoon liquid over potatoes before serving. Season with extra salt and pepper if desired.
