- 2 whole garlic cloves
- ¼ cup water
- ½ teaspoon salt
- 2 Tablespoons vegetable oil
- 1 cup long grain rice
- 1 ½ cups vegetable broth
Instructions
- Prepare Tomato Sauce: Blend the tomatoes, garlic, onion, and water together for 1-2 minutes until smooth to form your tomato sauce. Reserve about 1 ¼ cups of this mixture for the rice.
- Toast the Rice: Heat the oil in a large pan with a tight-fitting lid over medium heat. Add the rice and sauté until it becomes golden-brown, stirring frequently for even cooking.
- Combine and Simmer: Add the reserved 1 ¼ cups of tomato sauce to the pan. Mix well and allow to simmer for 5 minutes or until it thickens slightly.
- Cook Rice: Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pan, and let it simmer for 15-20 minutes, checking at the 15-minute mark.
- Let Stand: Once the liquid has been absorbed, turn off the heat. Fluff the rice gently with a fork and let it sit covered for an additional 10 minutes.
