3 cups cauliflower rice
1 tbsp seasoned rice vinegar
3 (5 oz) cans of tuna, drained
1 Persian cucumber, thinly sliced
1/2 tbsp toasted black sesame seeds
1/2 tbsp toasted white sesame seeds
2 green scallions, thinly sliced
Spicy Mayonnaise:
3/4 cup mayonnaise
1 1/2 tbsp sriracha sauce
1 tsp toasted sesame oil


Instructions

Prepare the Cauliflower Rice:
Steam the cauliflower rice until tender.
While the rice is still hot, drizzle it with seasoned rice vinegar and mix well. Taste and adjust with more vinegar if needed.
Divide the cauliflower rice evenly among three meal prep containers, adding 1 cup to each.
Make the Spicy Tuna:
In a large bowl, combine the mayonnaise, sriracha sauce, and toasted sesame oil. Mix until well blended. Adjust the amount of sriracha based on your preferred spice level.
Add the drained tuna to the spicy mayonnaise mixture, stirring until the tuna is evenly coated.
Divide the spicy tuna evenly among the meal prep containers, placing it next to the cauliflower rice.
Assemble the Bowls:
Add thinly sliced cucumber to each meal prep container.
Garnish the rice and cucumbers with the toasted black and white sesame seeds.
Garnish the spicy tuna with thinly sliced green scallions.
Store the meal prep containers in the refrigerator for up to 3 days.
