Ingredients
200g (1 cup) red lentils
1 small bunch parsley, chopped
1 medium onion, diced
4 Tbsps psyllium husks, or one large egg
4 Tbsps nutritional yeast flakes
2 bell peppers (one red, one yellow), chopped
60g (½ cup) chickpea flour
2 tsps smoked paprika
1 tsp spicy paprika
½ tsp chili flakes
Sea salt and ground pepper, to taste
Oil, for frying
Instructions
Add lentils to a pot and cover with water. Bring to a boil and cook for 15 minutes. Remove from heat.
Strain the lentils thoroughly and place in a large bowl. Mash using a fork or vertical blender.
Incorporate the remaining ingredients, except oil. Mix until the composition is sticky and moldable. If too wet, add more flour until reaching a dough-like consistency. Optionally, refrigerate for 10-15 minutes to firm up.
Lightly oil a non-stick pan. Form patties and fry each side for about 2 minutes until golden brown.
